Gluten free coconut shrimp

Winter is approaching and some of us will start day dreaming of tropical vacations. Have not fear! Here at Celebration CrossFit we have your back. When you are craving a tropical dish give these gluten free coconut shrimp a go.

This recipe is super simple to make and you can pair it with green apples to add some tartness to the flavors.

Ingredients:

12oz of shrimp (defrosted)

1/2 cup of tapioca flour

1/2 cup of coconut flour

3 eggs

salt and pepper to taste

o1/2 cup of unsweetened coconut flakes

Oil for frying

Preparation:Defrost and peel the shrimp, set aside  .Heat a skillet with oil for cooking .Combine the tapioca and coconut flour, beat the eggs together and season with salt and pepper. Dip the shrimp one by one in the egg mix. Then dip them in the flour mix, dipped them in the egg again and put them in the coconut flakes. This recipe makes 4 servings of 4oz each  .Cook until golden brown.
